Pasta, made healthier

I am doing a modified version of the Southbeach diet. Many think its not possible to eat pasta on this diet, and that is purely low-carb. I say NO WAY. It’s not that unhealthy Adkins! Here’s how you could make yourself a bowl of pasta that is nutritious and has three of the five food groups: Whole Grain, Veggies, Cheddar. I should also mention that it is vegetarian. No, I’m not vegetarian but once in awhile its good to have a non-meat meal.

Boil a pot of water. Add salt. When its boiling, add in whole wheat rigatonni (sp?)
Defrost and warm some frozen veggies like carrots and broccolli.
16 after the pasta has been boiling, remove and add to the veggies
Stir in some no sugar added sauce, any kind that is your favorite.
Top with shredded cheddar cheese, stir
And EAT!

That was my dinner. I thought of adding in chopped tomatoes but I decided to make the whole dish a warm one instead and the juice of tomatoes can sometimes make the meal watery. The sauce I used also had sundried tomatoes. Did you know tomatoes are a great source of lycopene?
